Introduction:
Easy Milk Barfi Recipe is perfect for any special occasion. This popular Pakistani and Indian sweet treat is enjoyed at all festive occasions such as Eid or Diwali. It is served with Sheer Khurma on Eid. Fresh milk barfi, gulab jamun, and other sweets were always purchased at the sweet shop when I was growing up in Pakistan. Even though I live far away, I have always made my own sweets for special occasions.
Ingredients:
- Ghee, 1/3 cup
- 1 cup whole milk
- 3 cups of full-fat milk powder
- Sugar granules, 3/4 cup
- 7 pods of cardamom (see notes)
- 1/8 teaspoon of salt
- 2 tbsp of almonds
- 1 tbsp of rose petals (optional).
Instruction:
- Heat the ghee until it is completely melted.
- Add the milk powder to the ghee, and heat it until the powder is dissolved.
- Add the milk powder in small amounts to prevent clumping. Continue whisking until it's all combined.
- Stir the sugar until it melts.
- Stir constantly on medium-low heat until the mixture begins to thicken.
- Add the cardamom about halfway through and stir.
- Keep stirring the mixture for a couple of minutes after it starts to separate from the sides of your pan. You should have a soft, doughy mixture at the center.
- To avoid overcooking, turn off the heat at this stage. Take 1/2 teaspoon and place it on a serving plate.
- If it does, then your mixture is ready to be poured into the baking pan. The mixture is now ready to be poured into the baking pan.
- Use nonstick spray to grease your pan and line it with parchment.
- Pour the mixture into the pan, and use a spatula or a spoon to smooth out the surface.
- Sprinkle the rest of the nuts on top and gently pat them to adhere.
- Place the barfi into the refrigerator to set. Add rose petals, silver leaves, or any other garnish.
- After 30 minutes, carefully remove the barfi from the tin by lifting it with the parchment and cutting it into diamond or square shapes.
